3 Healthy Salad Recipes

These 3 Healthy Salad Recipes are perfect for anyone looking to clean up their diet, or add in a variety of flavors to their weekly healthy recipes.

Each of these salad recipes makes 4 meals. What I recommend doing is prepping one recipe per week on the weekend for four lunches the week ahead!

Cilantro Lime Quinoa Bowl

Ingredients

  • Bowl:
  • 1 Pound Ground Turkey
  • 1 Bag Baby Spinach
  • 1 Cup Red Quinoa
  • 2 Orange Bell Peppers, chopped
  • 1/2 Cup Crumbled Feta Cheese
  • 1/4 Yellow Onion
  • 1 Tbsp Olive Oil
  • Salt to taste
  • Dressing:
  • 1 Cup Plain Greek Yogurt
  • 1 Cup Packed Fresh Cilantro
  • The juice from 1 Lime
  • Salt to Taste

Instructions

  1. Bowl:
  2. Start by sautéing onion in olive oil in medium frying pan.
  3. Add in ground turkey and cook over medium heat until brown.
  4. Season ground turkey with cumin, chili powder and salt.
  5. Set meat aside.
  6. In a large bowl (or plate) combine 2 handfuls of spinach, 1/2 cup cooked red quinoa, 1/4 orange bell pepper, 2 tbsp feta cheese and 3/4 cup cooked ground turkey.
  7. Dressing:
  8. Place all ingredients in a food processor or high powered blender. Process until completely blended and serve.
  9. Drizzle two tablespoons of dressing over quinoa bowl and serve!

Chicken + Falafel Greek Salad

Ingredients

  • Falafels:
  • 2 Trader Joes Falafel Mix
  • 1.5 Cups Water
  • 1/2 Cup Olive Oil
  • Greek Salad:
  • 16 oz Grilled Chicken
  • 2 Cups Red Grapes, Halved
  • 1 Cup Crumbled Feta Cheese
  • 1 Cup Artichoke Hearts
  • 8 Cups Spinach, Packed
  • 2 Cups Cucumber, Sliced
  • 8 Tbsp Trader Joes Feta Style Greek Dressing

Instructions

Falafels:

  1. Combine TJ's Falafel Mix and water.
  2. Heat 1/4 Cup olive oil in a large pan or wok.
  3. Use small cookie scoop to drop balls of falafel mix into hot olive oil.
  4. Let simmer on medium heat for 30-60 seconds then roll to another side.
  5. Repeat until all sides are browned.
  6. Lower heat and cover until falafels are fully cooked through.
  7. Combine 4 oz grilled chicken, 1/4 cup cucumber, 2 TBSP feta cheese, 2 cups packed spinach, 1/4 cup artichoke hearts, 1/2 cup grapes, 2 Tbsp TJ's Feta Style Greek Yogurt Dressing and 3 falafels into a bowl and enjoy!

Santa Fe Salad

Ingredients

  • 16 oz of Grilled Chicken
  • 1 Red Bell Pepper, sliced
  • 1 Cup Black Beans, rinsed and drained
  • Trader Joes Frozen Roasted Corn, steamed
  • 1 Avocado, diced
  • 1/2 White Onion, diced
  • 1 Cup Packed Fresh Cilantro
  • 8 Tbsp Salsa
  • 8 Tbsp Plain Greek Yogurt
  • 4 Tsp Cumin

Instructions

  1. Combine 4 oz grilled chicken, 1/4 red bell pepper, 1/4 cup black beans, 1/4 cup roasted corn, 1/4 avocado, 2 tbsp onion, 1/4 cup cilantro, 2 tbsp salsa and 2 tbsp plain greek yogurt.
  2. Sprinkle salad with 1 tsp cumin and enjoy!

I did all of my shopping for these salads at Trader Joes, but you can shop around and get most of these ingredients at your local grocery store!
