Each of these salad recipes makes 4 meals. What I recommend doing is prepping one recipe per week on the weekend for four lunches the week ahead!
Cilantro Lime Quinoa Bowl

Ingredients
- Bowl:
- 1 Pound Ground Turkey
- 1 Bag Baby Spinach
- 1 Cup Red Quinoa
- 2 Orange Bell Peppers, chopped
- 1/2 Cup Crumbled Feta Cheese
- 1/4 Yellow Onion
- 1 Tbsp Olive Oil
- Salt to taste
- Dressing:
- 1 Cup Plain Greek Yogurt
- 1 Cup Packed Fresh Cilantro
- The juice from 1 Lime
- Salt to Taste
Instructions
- Bowl:
- Start by sautƩing onion in olive oil in medium frying pan.
- Add in ground turkey and cook over medium heat until brown.
