The winter weather is hanging on it’s got me on a baking kick! It couldn’t be that I’m 32 weeks pregnant, could it?! Most of the time lots of baking means more sugar, and grains in your diet. So personally I believe there’s nothing better than finding SIMPLE recipes that are healthy and delicious. TIPS:

  • Flours – Tapioca flour when using almond flour in the recipe helps bind the ingredients together a bit better than leaving it out of the recipe. I did not rest the recipe with out it and I haven’t tried it with wheat flours or other gluten-free flours. Substitute at your own risk!

Gluten-Free Banana Chocolate Chip Muffins

I love creating recipes that are delicious AND healthy. This recipe is probably my favorite baked good creation that uses a non-conventional flour, not to mention very little sweetener. Below is my Gluten-Free Banana Chocolate Chip Muffin recipe that uses almond flour, coconut sugar, stevia and eggs. Maybe a few more ingredients, but those are the major ones! Simple doesn’t always mean healthy. These muffins, however, are simple AND healthy!

TIPS:

  • Coconut sugar is not required. These are naturally sweet with ripe bananas and the stevia! The coconut sugar can be used if you’re used to your ‘sweets’ being extra sweet!
  • These may be made dairy-free as well by simply replacing the chocolate chips with cocoa nibs, DF chips or using blueberries.

I decided to throw together a couple of my favorite, uber simple “taco” recipes. You can thank me later for these Taco Tuesday Recipes (Crockpot Edition) after your entire family is begging you to make them again!

Garlic Lime Pork Fajitas

Ingredients

  • 2-3 lb Boneless Porkloin Roast, rinsed with the fat trimmed off and then patted dry with paper towel
  • 2 bell peppers, sliced
  • 1 small onion, peeled and sliced
  • 2 cloves of garlic, minced
  • The juice from 1 lime
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup organic chicken broth
  • 1 tbsp extra virgin olive oil

Instructions

  1. Over medium heat place olive oil in a large pan and brown all sides of pork roast.
  2. Combine all ingredients in your crockpot and cover with lid.

These 3 Healthy Salad Recipes are perfect for anyone looking to clean up their diet, or add in a variety of flavors to their weekly healthy recipes.

Each of these salad recipes makes 4 meals. What I recommend doing is prepping one recipe per week on the weekend for four lunches the week ahead!

Cilantro Lime Quinoa Bowl

Ingredients

  • Bowl:
  • 1 Pound Ground Turkey
  • 1 Bag Baby Spinach
  • 1 Cup Red Quinoa
  • 2 Orange Bell Peppers, chopped
  • 1/2 Cup Crumbled Feta Cheese
  • 1/4 Yellow Onion
  • 1 Tbsp Olive Oil
  • Salt to taste
  • Dressing:
  • 1 Cup Plain Greek Yogurt
  • 1 Cup Packed Fresh Cilantro
  • The juice from 1 Lime
  • Salt to Taste

Instructions

  1. Bowl:
  2. Start by sautéing onion in olive oil in medium frying pan.
  3. Add in ground turkey and cook over medium heat until brown.
  4. Season ground turkey with cumin, chili powder and salt.
  5. Set meat aside.
  6. In a large bowl (or plate) combine 2 handfuls of spinach, 1/2 cup cooked red quinoa, 1/4 orange bell pepper, 2 tbsp feta cheese and 3/4 cup cooked ground turkey.

Here’s the truth about soy; soy in the past has been the bee’s knees for a hard core vegan. And for good reasons like it’s punch of protein and wonderful phytonutrients. And for years now people of put soy on a pedestal, nutritionally speaking, until now.

Is it all it’s cracked up to be. The answer may be no. Dangers of soy have been coming up more and more in products like soy protein powders, soy formulas, or plain old soy lecithin (commonly described as an emulsifier to prevent clumping). Turns out soy may be more harmful to our health than helpful.
