HEALTHY Recipe Lettuce Wraps & Cauliflower Fried Rice

Which is why I’m starting to release some of my favorite dinner recipes right here for you to start feeding your loved ones. This Chicken Lettuce Wraps and Cauliflower Fried Rice Recipe is an easy healthy meal your entire family will love!

I don’t know about you, but when I restrict my eating and wind up missing foods I love and find myself raiding the fridge for something to bring my taste buds back to life. So I can relate to how awesome it is when you find healthy, simple recipes that keep you on track and allow you some freedom with your foods. These lettuce wraps will be just that.

Key Ingredients

Coconut Aminos are a healthier alternative to soy sauce. This topic is controversial, however, I’m a firm believer that soy can have a negative impact on our bodies and alter your hormone levels. Therefore, I recommend just staying clear of it and replacing your soy sauce with these coconut aminos.

This chicken lettuce wrap recipe also incorporates fresh cilantro. This versatile herb is a good source of fiber, contains the vitamins A, C, E, K, calcium, iron, potassium, and magnesium. Eating just ¼ cup of fresh cilantro provides you with nearly half your recommended daily value of vitamin A and K. It also rids your body of harmful heavy metals, decreases oxidative stress in the body, decreases anxiety, lowers blood sugar levels and can prevent UTI’s.

Chicken Lettuce Wraps

Ingredients

  • - Filling-
  • 4 Boneless chicken breasts, trimmed and finely chopped
  • 2 Teaspoons olive oil
  • 1 Large carrots, peeled and chopped
  • 2 Celery Stalks, cleaned and chopped
  • 1/2 White onion, chopped
  • 2 Cloves garlic, minced
  • One 6-ounce can water chestnuts, chopped
  • 1/4 Cup coconut aminos or liquid aminos
  • 2 Tablespoon rice wine vinegar
  • 1 Tablespoon Dijon mustard or spicy mustard
  • 1 Tablespoon Sriracha sauce
  • Add a few pinches of Pink Himalayan Salt as desired
  • - Honey Ginger Salad Topping -
  • 2 Cups mixed broccoli slaw (cabbage slaw works well too)
  • 1 Handful fresh cilantro, chopped
  • 1 Tbsp raw honey
  • Fresh grated ginger, as desired
  • 8 to 12 large butter lettuce leaves, cleaned and dry

Instructions

  1. In a skillet - heat olive oil and sauté white onion, salt, garlic, celery and carrot until golden brown
  2. Add in chopped chicken breast to mixture and brown
  3. Add filling ingredients and simmer on low for an additional 10 mins, until chicken is fully cooked has taken on the various flavors
  4. While your chicken is simmering - in a medium bowl combine your slaw, cilantro, melted raw honey, and fresh grated ginger and set aside
  5. Assemble wraps by placing two tablespoons of filling in the middle of a piece of butter lettuce and top with 1 tbsp of honey ginger slaw
  6. They ENJOY!

Cauliflower Fried Rice

Yield: 4 people

Ingredients

  • Whisk your eggs together in a small bowl
  • In a pan over medium heat add 1 tsp coconut oil, whisked eggs, some salt and pepper and scramble
  • Place scrambled eggs in a small bowl and set aside
  • In the same pan - sauté white onion, garlic and carrot in 1/2 tbsp of ghee or grass fed butter
  • Add riced cauliflower to veggies and continue sautéing over medium heat for approximately 3-5 mins (leave a little crunch in the cauliflower)
  • Turn heat down and throw in sweat peas and coconut aminos and cook for another 3-5 stirring often.
  • Stir in scrambled eggs and 1/2 tbsp of butter
  • Sea salt for additional flavor if desired

Instructions

  1. 1 bag of riced cauliflower (or place two heads of cauliflower in a food processor and pulse until riced)
  2. 1 Tbsp Ghee or grass fed butter
  3. 1/2 Cup coconut aminos
  4. 1 Cup sweet peas
  5. 1 Cup carrot, peeled and minced
  6. 2 Organic eggs
  7. 1 Garlic clove, minced
  8. 1/4 White onion
  9. 1 tsp coconut oil
