Taco Tuesday

Behold the good news – TACO TUESDAYS are totally acceptable and encouraged! Coming from a Mexican who will never turn down a good taco . . . I decided to throw together a couple of my favorite, uber simple “taco” recipes. You can thank me later for these Taco Tuesday Recipes (Crockpot Edition) after your entire family is begging you to make them again!

Garlic Lime Pork Fajitas

Ingredients

  • 2-3 lb Boneless Porkloin Roast, rinsed with the fat trimmed off and then patted dry with paper towel
  • 2 bell peppers, sliced
  • 1 small onion, peeled and sliced
  • 2 cloves of garlic, minced
  • The juice from 1 lime
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup organic chicken broth
  • 1 tbsp extra virgin olive oil

Instructions

  1. Over medium heat place olive oil in a large pan and brown all sides of pork roast.
  2. Combine all ingredients in your crockpot and cover with lid.
  3. Cook on “low” setting for 4-6 hours or until pork is cooked through and tender.
  4. With two forks shred pork.
  5. Warm corn tortillas then add the pork, peppers and onions. Top with shredded lettuce, hot sauce or salsa, plain greek yogurt (sour cream substitute), and shredded cheese.

Creamy Salsa Verde Chicken Tacos

Ingredients

  • 2 lbs boneless chicken breasts, rinsed dried and trimmed
  • 15oz can organic black beans, drained and rinsed
  • 1 large green bell pepper, cleaned and sliced
  • Half of a bag of frozen roasted corn
  • 16oz jar salsa verde
  • 2-4 oz cream cheese (depending on how creamy you want it)
  • Salt and Pepper to taste

Instructions

  1. Place chicken breasts in crockpot. Add black beans, corn, peppers and salsa verde.
  2. Cook in crockpot on “low” for 4-6 hrs or until chicken is cooked through.
  3. Add cream cheese (just throw it on top) and let sit for about 1/2 hour.
  4. With two forks shred chicken.
  5. Use chicken to create tacos on corn tortillas or a taco bowl and serve with fresh cilantro, pico de gallo, shredded lettuce, spanish rice etc...
